• Dairy’s Role in the New Era of Protein

    Protein was everywhere at the 2018 Institute of Food Technologists (IFT) Annual Meeting & Food Expo held July 15–18, in Chicago. USDEC and its members helped the more than 23,000 attendees from more than 90 countries learn that dairy is a proven and unmatched protein solution for the food industry.

    A deep lineup of members showcased how specific dairy ingredients can be used in targeted executions with exacting results, helping new developers learn about dairy’s versatility and experienced developers see new opportunities.

    The USDEC booth showcased why not all proteins are created equal by highlighting dairy’s: 

    • Nutritional profile: According to the Institute of Medicine’s Dietary Reference Intakes, high-quality protein is defined as a protein that contains all the essential (indispensable) amino acids in the ratios needed by the body while maintaining bioavailability and rapid digestibility. Dairy proteins meet these requirements.
    • Development and application: Dairy ingredients are proven tools in delivering the processing requirements food companies require and the sensory (e.g., mouthfeel, taste/aftertaste) needs consumers have. Many new and emerging protein sources are still working through these challenges.

     Protein must still meet consumers’ sensory and experience needs. From the growth of mini-meals, to the breadth of global food flavors and forms—the food marketplace is more diverse than ever. Though consumers desire more protein sources and options, what still matters most is meeting their needs for a great-tasting, safe, quality product that fits their lifestyle and preferences.
